Living La Vida Lo-Carb

Guar Gum! You think I'm crazy, right? It's extremely lo-carb and works like flour or cornstarch to thicken stuff. From the product description: Guar Gum has eight times the thickening power as cornstarch and is an excellent all-purpose thickener for salad dressing, ice creams, puddings, gravies, sauce, soups and more. It's also a great binder for use in baked goods. Gluten free. 

It's sticky, tho -- the best recommendation I ever got was to put the guar gum into a sugar shaker -- shake and whisk in real fast. I use it to make cream sauces, creamed spinach, and cream gravy.
